This easy to make chutney goes great as a delicious topping for brie or as a great accompaniment to pork chops or chicken breasts.
PREP TIME: 10 minutes
COOK TIME: 15 minutes
TOTAL TIME: 25 minutes
1 Tbs. Butter
1 Granny Smith apple, peeled, cored and cut into 1/2 - 1/4 inch cubes
1/2 Cup whole fresh cranberries
1/2 Cup granulated sugar
1 Cup fresh or frozen blueberries
1/3 Cup pecans, chopped (set aside 2 tsp for garnish)
2 Tbs. honey
1/4 tsp. Cinnamon
1/4 tsp. Vanilla extract
- Melt 1 Tbs. butter in a heavy bottom saucepan over medium heat.
- Add apple and cranberries and sugar and cook down for about 5 minutes or until cranberries start to pop.
- Reduce heat and add blueberries, pecans, and rest of ingredients.
- Simmer on low for another 10 minutes.
